Tauri could be used to create offline native apps of Silverbullet. Since SB is already a PWA the development overhead should be minimal.

I think this has been discussed multiple times. In the early days silverbullet even was an electron app, but afair Zef just doesn‘t have an interest in making a desktop app again, but I guess you are free to create it if you want to.
As @MrMugame points out, we’ve been here before. The maintenance cost of keeping a Mac, Mac Intel, Windows, Linux, Linux ARM (and an iOS and Android build, which we also had at some point) etc. build and QA’ing them every time was too much overhead.
And then the issue was that you still need a server to sync your content (if you’d want to sync content). If you want to do create a Tauri wrapper separately, you can of course do this! There’s nothing stopping you, and I’d be happy to link to it.
